Gorgonzola Stuffed Filet
Statesboro Gorg Steak Sauce


  • 2 Filets
  • 1 tablespoon olive oil
  • 1 galic clove, minued
  • 2 tablespoons butter
  • 2 cups heavy cream
  • 1 shallot minced
  • 4 oz Statesboro gorogonzola crumbled
  • 2 tablespoons wine 
  • 2 strips bacon


Cut a pocket into raw tenderloin. Stuff 2-3 tablespoons of the cheese inside each filet. 

Heat olive oil in sauce pan over medium heat. Gently saute garlic and shallots until fragrant. 

Remove the pan from heat and whisk in heavy cream, wine and the rest of the gorogonzola until thickens. 

Grill steaks to desired temperature. Plate filet topped with cream sauce. 

Serve immediately .
