Avocaod Cobb Saladcobb salad statesboro

Ingredients:

Dressing

  • 3/4 cup canola oil
  • 1/4 cup red wine vinegar
  • 1 Tbsp lemon juice
  • 3/4 tsp dry mustard
  • 1/2 tsp worchestershire 
  • 1/4 tsp sugar
  • 1 galice clove, minced
  • salt and pepper to taste

Salad

  • 1/2 head iceberg lettuce
  • 1/2 head romain lettuce
  • 1/2 bundle watercress
  • 2 oz Statesboro Blue Cheese
  • 3 eggs, hard boiled
  • 1 chicken breast, poached or grilled
  • 2 medium tomatoes, diced
  • 1 avocado, sliced, reserve skin
  • 2 tsp chillies
  • 2 strips bacon, cooked and crumbled

Method:

Prepared salad by combining romaine, iceberg, watercress, blue cheese, bacon, chicken, tomatoes, chills and bacon. 

Prepare dressing by combining vingar, lemon juice, mustard, worchesteshire, sugar and garlic. Mix canola and olive oil together. Slow whisk in olive oil with vingar dressing. 

Add dressing to the salad and toss gently. 

Place salad mixture in avocado skins and top with avocado slices. 

Served chilled.
