Roasted Brussel Sprouts and Blue Cheese
- 2lb Brussel Sprouts
- ½ White Onion
- 4 cloves Crushed Garlic
- 3-4 Strips of Diced Bacon
- 3 tbsp Blue Cheese
- 3 sprigs Diced Thyme
- 1 sprig Diced Rosemary
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Melted Butter
- Salt & Pepper to taste
Preheat oven to 350 degrees
Trim and split the Brussel sprouts. Place into a large bowl.
Mix Brussel sprouts with olive oil, diced onions, and bacon.
Stir in melted butter, herbs, and salt and pepper.
Place in a greased pan and roast for 35-40 minutes.
Periodically check and turn with spatula. Outside should be crispy when ready.
